Step into the creative world of Jefferson's Master Blender Ale Ochoa and discover the craft that transforms individual barrels of bourbon into something extraordinary. In this hands-on seminar, Ale takes the reins as your guide through four signature expressions, revealing how balance, intention, and a masterful sensory instinct are the true secret ingredients behind every great pour. Like a painter commanding her canvas, Ale will walk you through her creative vision and the meticulous art of building a blend that tells a story.
More than just a tasting, this is an expedition into the science of flavor. You'll go beyond the glass, using extracts and flavor components to actively manipulate each expression, pushing them out of balance to discover exactly why the blend matters. By tasting Ale's finished work alongside your own modified versions, you'll experience firsthand the delicate alchemy that separates good whiskey from unforgettable whiskey.

Rooted: A Journey Through Oaxacan Terroir
Monday, July 20th | 12pm - 2pm
The Ritz-Carlton
921 Canal St
Mezcal is a spirit of place. No other category in the world so completely embodies the union of land, climate, ancestral craft, and human tradition. Yet as the category has grown, so has the pressure to flatten its complexity into something legible, scalable, and consistent -- the very qualities that mezcal resists by nature. This seminar invites guests into a rare, immersive blind tasting experience with six Del Maguey Single Village expressions. Across three paired vertical sets, guests will taste, discuss, and interrogate what they believe they are experiencing, guided by flavor, aroma, texture, and instinct alone. Each set will unlock a deeper layer of the story: the village, the family, the land, and the generations of tradition that produced what is in the glass.

Single Malt Symposium
Monday, July 20th | 3 - 5pm
The Ritz-Carlton
921 Canal St
Centuries ago distillers in Ireland and Scotland began making alcohol from barley. Ultimately, that liquor evolved to become the modern best-seller single malt whiskey, which is now produced and sold around the world. During the Global Single Malt Whisk(e)y Symposium at Tales of the Cocktail, world-renowned drinks expert and award-winning author Noah Rothbaum is moderating two single malt whiskey panels featuring distillers, blenders and brand ambassadors. These discussions will celebrate the large variety of flavor profiles found in this burgeoning category. While all single malt whiskies are made from just three ingredients (malted barley, water and yeast), they all taste different and distinct. Noah will introduce each panelist and lead the conversation to dive deep into this world.

Del Maguey's Single Village Music Series
Monday, July 20th | 11pm - 2am
House of Conviviality
900 Camp St
There's a truth at the heart of both music and mezcal: neither means anything without the story behind it. Del Maguey's Single Village Music Series is built on this premise, gathering community to celebrate the stories and artistry behind our favorite tunes and sips. At this special Tales of the Cocktail edition, we’ll be joined by Sonido Gallo Negro to bring the cumbia and JungleBird Puerto Rico to pour alongside them, painting an evening that honors the Oaxacan village families and generations of tradition that make Del Maguey what it is. Come as you are. One evening only and it just might be your favorite night of Tales.

The Cocktail Menu Manifesto
Wednesday, July 22nd | 3:30pm - 4:30pm
The Ritz-Carlton
921 Canal St
No doubts, a bar menu is a great piece of the venue’s identity. These days the role a cocktail list plays goes to the lengths of even being an award category. So, what makes a great cocktail menu? Given the amount of time and resources that go into the creation of a new menu its lifespan seems minimal and often aimed at generating PR and buzz rather than creating value and catering for the business it fits. In this seminar, we discuss the different areas that go into building a new menu with the participation of a variety of global bar industry experts. Looking at how each phase of the development responds to a different purpose of a bar’s project and how it delivers against tangible business objectives - from concept to R&D, design and communications, each area needs to be weighted and curated according to the venue, the brand and the customers it caters for. Moderated by Danil Nevsky, this seminar expands on Indie Bartender’s educational mission and its recently launched Cocktail Menu Collection project, a free 200+ (constantly adding) database of cocktail menus collected all over the world to provide bartenders with guidance and inspiration around cocktail menu building.
