Pernod
Pernod is France’s oldest anise liqueur and is made from distillates of star anise, fennel, and 14 additional botanicals such as coriander and mint. It is an anise spirit with a distinctive taste and universal mixability. Carefully selected ingredients and the elaborate production process, in which the anise spirit is macerated, give Pernod its characteristic flavor. When mixed with water, it develops a mysterious, opalescent sheen known as “louche.”
Pastis 51
Pastis 51 is now produced exclusively in Marseille. Its production differs from that of other anise spirits. While, for example, Pernod is made through distillation, Pastis 51 is a “compound” spirit, meaning it is produced by blending ingredients cold. In its original expression, Pastis 51 is bottled at 45% ABV, giving it its unique aroma and lively anise flavor. When mixed, the color changes and becomes milky with ice-cold water. Like Pernod, Pastis is traditionally enjoyed diluted at a ratio of 1:5. In France, Pastis is among the most popular spirits, especially in the southeast of the country, where this anise drink originated.
