Melbourne, Australia – G.H. Mumm’s revered private dining experience returns to the Melbourne Cup Carnival for a sixth year, this time in collaboration with one of Sydney’s most in-vogue dining destinations, Olympus Dining.
Following its debut in 2019, the newest iteration of G.H. Mumm’s exclusive private dining experience will see guests transported across the Mediterranean Sea, setting sail in G.H. Mumm’s Private Yacht. Maison Mumm’s signature French hospitality will be complemented by a vibrant menu of Greek inspired flavours, with Olympus Dining joining an exclusive stable of hospitality icons from around the globe, who have brought their distinctive cuisine together with G.H. Mumm’s prestigious cuvées.
Since opening in December 2024, Olympus Dining has shot to fame, becoming a must-visit destination on Sydney’s dining roster, drawing national attention for its unique take on traditional Greek flavours and its immersive, architecturally bold setting — centred around a 50-year-old bougainvillea tree beneath a retractable glass oculus ceiling.
With its expansive menu and communal spirit, rooted in a celebration of tradition and a passion for culture - Olympus Dining finds a natural synergy with G.H. Mumm, whose Cordon Rouge has been seen as a symbol of celebration since its debut in 1875. Available throughout the Birdcage marquee and Flemington Racecourse it’s been the heart of society and culture since its first release.
As part of the 2025 partnership, Flemington racegoers will experience two bespoke dishes that reflect the distinctive dining style of restaurateur Jonathan Barthelmess, founder of The Apollo, Cho Cho San, Greca, Yoko, and Olympus Dining, crafted exclusively for guests of G.H Mumm’s private dining space. The intimate experience seats just 12 guests across four sessions each race day of the Melbourne Cup Carnival.
Taking inspiration from the spirit of the Melbourne Cup Carnival, and the feeling of being aboard a yacht on sparkling waters, each dish has been designed to be refined, elegant, and easy to enjoy and savour with cuvées from G.H. Mumm’s prestigious RSRV range.
RSRV stands for reserved, and the Mumm Chef de Cave would use these initials to denote cuvées of exceptional quality in their cellar book, and reserve these for a circle of insiders and friends only. Now, RSRV is used for five prestige champagnes, all 100% Grand Cru.
Matched with Olympus Dining’s Ntomata tart is the RSRV Blanc de Blancs 2015. Crafted exclusively from Chardonnay grapes grown in the prestigious village of Cramant, Champagne’s most exceptional terroir for Chardonnay, the RSRV Blanc de Blancs 2015 is delicate and airy. The Champagne’s freshness and creamy texture is superbly matched with the Ntomata tart; a delicate, crispy, buttery filo pastry topped with parmesan custard and heirloom tomato.
Epitomising the excellence of its terroir and savoir-faire, the RSRV Rosé Foujita is known for its fullness and power. A blend of six Grand Cru terroirs, The Olympus Dining team has paired the Champagne with the robust flavour of crumbed lamb cutlets, served with an indulgent G.H. Mumm Reserve beurre noisette.

Cordon Rouge
Unmistakable. Since 1876, the iconic cuvée with its bold red sash (a nod to the Legion of Honor award) signals the start of a memorable moment. Blended from a palette of 120 crus, Mumm Cordon Rouge expresses the rich diversity of Champagne’s terroirs, always in the fresh, vibrant style that is the signature of Pinot Noir, the House’s emblematic grape. Mumm Cordon Rouge makes an excellent apéritif, with its appetising freshness and lively aromas of white and yellow fruits.
RSRV Blanc de Blancs 2015
RSRV Blanc de Blancs is produced exclusively with Chardonnay grapes from Cramant (“chalk mount”) in the Côte des Blancs. Notably, the vines harvested include those from historic plots acquired by Maison Mumm. For RSRV Blanc de Blancs 2015, a relatively low pressure of 4.5 bars (compared with 6 in general for other champagnes) enables the wine to fully express its minerality and subtle sparkle. After a minimum of three years aging in the cellars and a light dosage of 6 grams per litre, this 100% Grand Cru cuvée is produced in limited quantities.
RSRV Rosé Foujita NV
RSRV. With these initials, the House’s Chefs de caves have marked in their cellar books certain exceptional wines “reserved” for a circle of insiders, friends of the House. In the 21st century, Maison Mumm has bestowed this designation on five prestige champagnes, all 100% Grand Cru including RSRV Rosé Foujita. It is a blend of six Grand Cru made of Chardonnays from Cramant and Avize (30%), and Pinot Noir from Aÿ, Bouzy and Verzenay. Grand Cru red wine from Ambonnay terroir is added to the blend, bringing out minerality and roundness, along with red and black fruits aromas. Pressed and vinified separately, these five Grand Cru are then blended while adding reserve wines (30%). The cuvée is left to mature in the cellars for four years minimum, before the expedition liqueur – produced from Grand Cru aged in oak barrels – adds final notes of vanilla and pastry.
